In The Kitchen Tour 2019: Selecta’s Le Primizie at the service of Chic Chef
Downstream of a 2018 that was rich in recognition and saw the participation of a growing number of catering professionals, a new season of the In The Kitchen Tour, the popular event created by the CHIC – Charming Italian Chef Association, is about to kick off.
Once again this year, Selecta shall be alongside the CHIC Chefs, seeking to transmit – through its offerings – new cultures, trends and territories, firm in the conviction that innovation, research, knowledge and discovery in gastronomy are the lifeblood of the catering of today and tomorrow.
The appointment for the first leg of the In The Kitchen Tour is set for Tuesday, 28th May from 10:30 a.m. to 2:30 p.m. at the Ristorante Al Vedel in Colorno, a point of reference for the entire catering sector in Emilia, home to CHIC member Enrico Bergonzi. This restaurant represents not only the history of a family but that of an entire territory within the elegant walls of the structure that has dominated the countryside on the outskirts of Colorno (Parma) for over two centuries, first as a place of sustenance for wayfarers and now as a point of reference for quality Parma cuisine. Restaurant and artisanal charcuterie of typical cured meats offers up the prized Culatello di Zibello DOP, the rare Spalla Cruda di Palasone that is still produced by hand at the Podere Cadassa (the Bergonzi family’s charcuterie production company), with the utmost respect of the pork-butchery tradition of the Parma lowlands.
To stimulate the creativity of over 40 chefs, Selecta will present a selection of ingredients of undisputed value, the result of its relentless pursuit of the best food products from around the world – from Canadian Premium Shellfish Lobsters, Loch Fyne Salmon, Nature’s Meadow beef to Rougié duck meat. There will also be the latest from Valrhona with Tulakalum 75% and Caranoa 55%.
A season of the In The Kitchen Tour rich in excitement, encounters and surprises is set to start.
