Wagyu Tartare and Cinco Jotas Acorn-fed 100% Ibérico Ham

ingredients
  • 10 g Vegetables including:
    • Green courgette
    • Yellow courgette
    • White turnip
    • Asparagus
  • Olive oil to taste
  • Pepper to taste
  • Sweet soy to taste
  • Herbs to taste
preparation

Cut the vegetables julienne-style then cook in a saucepan with a little salted water. Run them under cold water three times.

  • 20 g A5 Wagyu
  • 10 g Cinco Jotas Acorn-fed 100% Ibérico Ham

Cut the Wagyu into cubes and Cinco Jotas Acorn-fed 100% Ibérico Ham into thin strips.

Assembly and finishing

Roll the vegetables around the outside of a ring mould, filling the inside with the wagyu. Remove the ring mould and place the julienne of Cinco Jotas Acorn-fed 100% Ibérico Ham on top of the wagyu cylinder. Season with a little oil, salt and pepper plus a few drops of sweet soy around the composition.
