Cook the octopus at 90° C for 50 minutes. Allow to cool in the cooking water. Drain, season with salt and mignonette pepper. Pass over hot coals to smoke. Shell the peas, cook them for 5 minutes in boiling salted water then cool in an ice bath to set their colour. Coarsely chop the peas in a blender with salt and mild olive oil.

preparation
Desalt the capers, caperberries and caper leaves for 12 hours. Blanch the cherry tomatoes in boiling water for 30 seconds then cool in an ice bath before carefully peeling. Chop cherry tomatoes, capers, caperberries and caper leaves. Season with a little soy sauce and Marusho rice vinegar.

- Porto Santo Spirito Cuttlefish
preparation
Cut the cuttlefish into pieces. Chop the onion, garlic and parsley stalks very finely then sauté everything in a pan with delicate extra virgin olive oil. Moisten with a splash of wine. Cook for 10 minutes, adding boiling vegetable stock as needed. Add the ink and adjust the salt.

preparation
Make a finely chopped mixture of onion, a little garlic, sage and rosemary. Brown in salted butter and delicate extra-virgin olive oil. Add the tomato and cook for 30 minutes, adding boiling vegetable stock as needed. Adjust the salt and homogenise with a blender. For the “poor man’s cheese”, coarsely chop the crust of a good durum wheat semolina bread baked in a wood-fired oven. Toast in a pan with delicate extra-virgin olive oil until the bread is golden brown, crumbly and crispy.

Cut the ’nduja and let it come to room temperature so that the fat melts and serves as a topping for the Mozzy Bag. Drain the Colatura di Alici molecules and place a teaspoon of them decoratively on the composition.
