ingredients
  • 12 Tsaritsa Cadoret oyster
  • 2 lemons, juice only
  • Chili pepper to taste
  • Evo oil
  • Chives to taste
  • 6 cherries
  • mixed leaves, as needed
  • 1 green tomato concassé
  • cucumber, as needed
  • green melon, as needed
  • puffed rice chips
preparation

Open the oyster, remove from the shell and preserve the water. Prepare a citronette by mixing the juice of two lemons and half the oyster water and slowly beating in the EVO oil a little at a time. Add a pinch of chili pepper and chives.

Dress the oysters with the citronette and leave to marinate in the fridge for at least 10 minutes.

Assembly and finishing

Place the oysters in a shallow plate, dress with the citronette marinade, and garnish with cherries, tomato, cucumber, melon and mixed leaves and rice chips.
