Leerfish Sashimi, Passion Fruit and Cinco Jotas Acorn-fed 100% Ibérico Ham

  • 200 g Leerfish filet
  • Salt to taste

Cut the fish into sashimi slices and season with a little salt.

  • 5 Passion fruits
  • 50 ml Extra-virgin olive oil
  • Salt to taste

Using a frother, make an emulsion with the passion fruit juice, extra-virgin olive oil and salt.

Assembly and finishing

Arrange the leerfish on a plate. Lay the Cinco Jotas Acorn-fed 100% Ibérico Ham (40 g cut with a knife) on top then use a blowtorch to slightly melt the fat. Finish with the passion fruit emulsion and adorn with a few edible flowers.
